MARINADE:

250mlGreek yoghurt

30mlfresh coriander leaves, chopped

1 – 2 garlic cloves, bruised

5mlground cumin

15mlfresh lemon juice
Place the mushrooms in a shallow mixing bowl that is suitable for marinating. Mix all the marinade ingredients together and stir it into the mushrooms. Leave to marinate for at least 4 hours, stirring occasionally.
Thread the mushrooms onto soaked wooden kebab skewers and BBQ them over moderate coals for about 5 minutes.
